Since its opening in July 1987, Bun on the Run has been a Fairbanks favorite. Sisters Gretchen and Ingrid Herrid ran the bakery for seventeen seasons, turning the small trailer into a beloved local institution. After their retirement, Ursula and her granddaughters, Gabby and Cassie, took over and continued the tradition for a few more seasons. Then, bakers Summer and Liz stepped in with a five-year plan, and when their time came to an end, they reached out to meāWendyājust as I was finishing college.
I started working at the Bun during summer breaks when I was just 14, under Ursulaās watch. Over the years, I stayed on through Summer and Lizās tenure, returning every season until I was 19. After that, I continued my passion for baking at home and worked as a bread baker at the Bozeman Food Co-op while attending Montana State University. When the opportunity to take over the Bun back home came my way, I couldnāt resist. How many people get to live out their childhood dream? So, in April 2014, I returned to Fairbanks and have been living the Bun life ever since.
For over thirty years, Bun on the Run has been a staple on the west side of Fairbanks, serving up fresh, homemade treats every summer. Weāve stayed in the same trailer, using the same oven and mixer since day one. Everything is made from scratch, right on site, in our tiny but mighty trailer. Although weāre one of the original food trucks in the area, weāre not mobile. You can find usārain, shine, or even snowāat the Beaver Sports parking lot from May through September.
